Let me start off by saying that I am not a food blogger so please don’t blame me if this recipe tastes like garbage. My grandmother, Bubby Martha, was an amazing cook and she made the most delicious food. I’m not going to write 25 paragraphs about how wonderful she was and how she made me into the woman I am today, you’ll just have to trust me. Here is her recipe for MandelBread or, as we call it, MandelBroit. It’s a soft cookie version of biscotti. Try it and let me know how it goes. Shabbat Shalom!
MandelBroit Recipe:
Preheat the oven to 350 degrees.
Mix together:
3 Eggs
1 cup canola oil
1 cup sugar
2 teaspoons vanilla extract
Here’s what it should look like at this point:
Now, add to this mixture:
3 cups of flour
2 1/2 teaspoons baking powder
3/4 cup chocolate chips
Mix well
Lightly wet your hands and form two logs on a sheet pan. It should look like this:
Bake for 28 minutes. Don’t over bake it!!
Let cool and then slice into thin pieces. Eat and enjoy!
P.S. I hope my mother doesn’t see this because her version is so much nicer looking than mine… I’m not sure why!!
Thank you for this! I have been making it every week since you shared it. I use a gluten-free flour mix and add 2.5 teaspoons of xantham gum and it (almost) doesn’t crumb. I also make four logs instead of two. It is too delicious - all gone within twenty four hours!
